Lemon Curd Muffin Top

Hi Friends,

I just wanted to tell you that you should make these lemon muffins.


Here is the recipe.  It's in British (weight not cups) so apologies for that but I used a scale.  Also I always do the swap of flour for ground almonds that he suggests and add lots of almond extract.  It's pretty delish.  Nick inhaled them - I even made them with gluten free flour and they worked perfect.

In other news, it's February first!  WTFFFFF!  I haven't even shared my New Years Resolution with you!  OK so here it is.... Get a PERKIER ASS!


So as you can see I am suffering from a bad case of secretary spread... thanks to my sedentary job.  I'm also  working on eliminating my chub rub.  (That is when your inner thighs touch... see above)

So tonight while Nick is in London for work, Heidi and me are having a girls night in.  We went for a run together.... during which Heidi puked, and I had to have a not so serious conversation with her on the dangers of Ana and Mia.  (...but seriously - who is YOUR thinspo?) Then we came home and we did some yoga with Tara Stiles - (youtube her)...  while Heid thought it was appropriate to skip the downward dog poses and drop her bone on me repeatedly... now she is taking a nap and I am seriously considering whether to paint my nails barbie dream house pink.  (It's probs not office appropriate.)

Speaking of which, I am SO looking forward to vet school, but so NOT looking forward to my future inability to wear childish sparkly nail polish.  (I hear it is hard to keep your nails long and nice when you have to stick your hands in places where the sun doesn't shine. )

Happy New Year!

Happy New Year to you all my blogging friends!  


I am so excited for 2011.  Mostly because 2010 sucked
But hey, so far, things are looking up, especially since I will end my year long stint of unemployment in two weeks!!!  So so excited for that.  


So I've been wondering what your resolutions are?  
Mine didn't go too well last year.
But this year, this year is going to be different!  
Right?  Right!


My overall goal is :  be more productive.
Problem with this is its largely unmeasurable, 
and I like goals that I can CROSS OFF a list.
Have you learned that about me yet?  ha!


So here are a few more of my goals for 2011....



  • Ride bike enough to pay for itself - (more on this later, but I got that super cute bike from my mom for xmas!!)
  • Volunteer
  • Get back to my happy weight (not my skinniest ever, just the one I am at when I'm being healthy)
  • Complete 30 tasks from my Day Zero list.
  • Finish decorating our house.
  • Do the dishes right after dinner.
  • Make British friends
  • Go on a honeymoon
  • Get to bed by 11pm 
  • Start our art collection
  • Go on a cool date with Nick once a month (we are alternating months, he is planning this month... and I am planning next month - any ideas?)
  • Annnnnnnnnnd, last but not least - Explore the Peak District (the national park which we basically live in ) once a month!

It really is a pretty place.

How 'bout those New Year's Resolutions?

It's already February - time is a-tick-tocking away!  Jeez this month has gone by pretty fast.  Just wanted to recap to remind myself of those pesky resolutions I made.

New Year's Resolutions

  1. Get experience for vet school
    • Bah, this hasn't happened yet.  I spoke to the vet about getting experience when I took Heidi in for her shots.  She wasn't willing to help me but gave me some leads which turned out to be dead ends.  Also she was Italian so didn't know much  anything about vet school in England.  Maybe I should put this on hold until we move up to Sheffield??? 
  2. Do more and stop thinking about doing more
    • I've been really good about doing things this month.  I guess a fire's been lit under my ass with needing to get this house in order to rent.  So much DIY has been done and I'm pleased with how this resolution has gone.
  3. Be proactive about establishing myself in London
    • Hmm... I don't know if this is really relevant anymore.  Must remember to establish myself well in Sheffield as soon as we move.
  4. Be active and healthy and quit yo-yo dieting
    • This hasn't happened at all.  The more I do things around the house the less time I spend cooking, which means more eating garbage.  I also really need to start running again, it's just SO cold!  (ugh ok I know just call me Whiny McWhinestein)
  5. Make a really good new English friend
    • This is also a no go.  I hope when I establish myself in Sheffield it will be easier to meet people than it has been in London.  There are no potential friends at the moment, but I'm spending so much time doing stuff in the house there hasn't been any opportunity for meeting people.  We're going to start taking Heidi to puppy school soon so maybe we can meet people there.
